For many, adding an engine to a dinghy allows the boat to be used for more than just short trips. The motor is almost necessary for larger boats where range and/or speed are important, and other means of propulsion are impractical. For inflatables in the usual sizes, an inboard engine is impractical due to it's size and weight. For all applications outboards are usually lighter, can be removed for servicing, and are less expensive.
